Easiest Ever Quickie Meal: Franks Red Hot Buffalo Tenders

This is one of my favorite go-to dishes because it’s super easy, filled with flavor, low-fat, low-calorie, hot & spicy and budget friendly. It’s pan-poached chicken tenderloins with Franks. That’s it. Top it with some cold avocado to cut the spice, add some creaminess, and you’re good. If you want, toss them in a taco, atop a salad, or with a side of steamed veggies. It’s such a simple and tasty base meal that I eat probably way too often… hey, it’s easy and tasty. I like it that way! ;)

So you’re buying high quality, beneficial ingredients like fruits, vegetables and lean protein- the basics… turns out, you’re actually missing some of the most basic basic AND best beneficial ingredients out there- spices. Not only do spices give you an amazing dynamic array of flavor choices, offering unlimited new ways to transform that chicken breast from Indian-inspired to Thai-spicy, but spices also have amazing health benefits. Sure, they come in teeny tiny jars, but don’t let their diminutive size lead you to underestimate their potent powers.



Healthy (cold) Nachos


I LOVE snacks. Which is why I created this low fat, crunchy, rich, spicy nacho-ish snack that satisfies my cravings without adding weight to my ass. It’s made up of a few of my favorite things: Knudsen Cottage Cheese, Pace Picante Sauce, and Pop Chips. More than a filling (not fattening) snack, the calcium in the cottage cheese and hot peppers in the salsa are known natural fat-burners: Bites with Benefits! Love that ;)
