1 Superfood 5 Ways: Avocado

While once considered by some a “forbidden fruit”, avocados are one of the biggest nutritional powerhouses, packing more potassium than two bananas and containing about 25 essential nutrients (Iron, Vitamins A, B, C, E and K to name a few) and who can forget the healthy fats?

While undeniably, eating cups of guacamole a day not be the smartest for your waistline and wallet, here are 5 easy and healthy ways to enjoy my favorite fruit, from breakfast to dessert.

1) Creamy Dreamy Chocolate Smoothie

This is one of my favorite, easy breakfasts. It’s low in sugar and the healthy fats keep me satisfied for hours. To up the protein intake, try So Delicious’ new almond milk (which has a much higher protein count).

2 cups almond milk (I use unsweetened)
1/2 avocado
1 heaping tablespoon cocoa powder
1 packet Stevia
2 dropperfulls Sweet Leaf English toffee extract
frozen banana chunks (optional, to give it that flavor, as well as make it creamier)

Blend (in a blender, VitaMix, immersion blender, etc) and enjoy

2) Savory Avocado Oats
Cook plain, unflavored oats (would also be great with quinoa) and then top with ½ avocado, cheese of choice, salsa and if desired, a hefty sprinkle of nutritional yeast.

3) Chilled Avocado Soup

4) Avocado and hot sauce on a corn thin or rice cake.
One of my favorite, easy snacks with staying power.

5) Raw Chocolate Pudding
