A Salad You Will Actually LOVE


I have never been a salad person. Yes, I know how “healthy” they are (except for the gobs of pure fat salad dressing), but I just couldn’t get into them. Until now… I am literally OBSESSED with Greenleaf Gourmet Chopshop’s Antioxidant Orchard Salad mixed with housemade dressing (that you can also buy and take home- which I have stocked up on). Celebrities flock to the Beverly Hills and Century City, California shops craving their high quality, low fat, super tasty concoctions that redefine salads, transforming them from “eh” to AMAZING, filling, and totally flavorful.

If you like your proof to be in the pudding, that’s personified in Executive Chef Kristi Ritchey who transformed her body and life by taking charge of her health, losing over 110 pounds by changing her diet and committing to a regimen of regular exercise including boxing, marathons, and Barry’s Boot Camp (another celeb fave). This is one of her (and now my) go-to salads. And as LA-centric as i can sometimes be, I realize that not everyone lives here. Which is why I asked for the recipe of this delicious low-fat high-flavor salad so that you too can incorporate it into your life… like everyday. Oh, and it is so high in antioxidants that you are not only being healthy because it’s low in fat, but it’s also overflowing with anti-aging nutrients.

ANTIOXIDANT ORCHARD SALAD
Yield: 1 serving

Baby Mixed Greens 3 ounces
Grapes 2 ounces
Celery, thinly sliced 1 ounce
Walnuts, roasted 2 ounces
Cranberries, dried 1 ounce
Blue Cheese (or feta) 1 ounce
Mint 4 leaves
Red Onion, thinly sliced 0.5 ounce
Cucumber, diced 2 ounces
Strawberries, sliced .25 cup
Blueberries .25 cup
Pomegranate Vinaigrette 2 ounces
Salt & Black Pepper To Taste (yes, salt on a salad helps up the flavor… just a little is always a great thing!)

(Keep in mind, I am not huge into exact measurements. If you’re not either, let the measurements give you a basic idea of approximately how much of each ingredient you should use).

Method:
1. Combine all ingredients in a salad bowl and toss with dressing to serve.
