Broccoli Soup

Broccoli Soup is on of my favorite weekly go-to meals. I make a big batch on Sunday, then have it for 3 days after as an instant, totally satisfying, super filling, insanely healthy meal. You can play with the recipe, but here it is for starters:

Several Heads of Broccoli- pieced
1 Head of Cauliflower- pieced
1 Onion- chopped
Chicken or Vegetable Broth (enough to just cover all the veggies when in the pot)
Salt (a few shakes… to taste)
White Pepper (a few shakes… to taste)
Sriracha (approx 1 tsp… to taste)
White Truffle Oil (optional- a few drops…)
GG Fiber Sprinkles

Cook down chopped onions in a pan. Add broccoli and let simmer for 5 minutes. Add enough chicken broth to cover the vegetables. Add salt and pepper and allow to simmer for 45 minutes. Put entire mixture into a blender and blend to your preferred consistency- I like it chunky. Top each serving with a few drops of White Truffle Oil and a few tbsp of GG Fiber Sprinkles (for fiber and texture).
