Healthy Pumpkin Protein Pancakes: Quickie in the Kitchen

I LOVE pancakes. But I honestly infrequently eat them because of the carbs. Which is why I am so beyond thrilled by these protein-packed pumpkin pancakes that aren’t just insanely tasty, belly-filling and emotionally-fulfilling, but they are Bites with Benefits! Here’s how…

Pumpkin:

Immune Boosting- It’s the beta carotene, an antioxidant that helps boost the immune system
Natural Glow and Tan- Again, the beta carotene brings out skin’s natural glow, and even makes you appear more tan!
Combats Post-Exercise Muscle Pain- An alkaline food, pumpkin helps reduce lactic acid build-up in your muscles, making it so that those post-exercise aches and pains go away faster.
And it’s just 30 calories per cup

Flax:

Skin Beautifying- Thanks to the Omega-3 fatty acids, flax is an natural beautifier and helps rid acne-causing toxins. It’s also a natural skin moisturizer that’s filled with antioxidants.

Eggs:

Muscle Recovery- With 6 grams of protein (naturally aids muscle recovery) per egg, you know your muscles will be well cared for, and it’s only 4-5 grams of fat each.
Wrinkle and Cellulite Control- It’s the lecithin in the yolk that helps with connective tissue which helps fight cellulite and wrinkles.

Oatmeal:

Blood Sugar Regulator- Complex Carb which helps control blood sugar levels

Ingredients
2 cups Whole Wheat Flour
2 cups Milk (or soy or rice milk)
1/2 cup Oatmeal
1 cup Pureed Pumpkin (from a can)
2 tbsp. ground Flax Seed
3 egg whites + 1 whole egg whisked together
1 tsp Vanilla Extract (or almond)
3 shakes Cinnamon Powder (or nutmeg or cloves or all)
1 tsp salt
Real Maple Syrup or Cottage Cheese OR Both!

Directions
-Mix all ingredients in a mixing bowl using a whisk.
-Spoon out pancake batter on a pancake griddle
-Top with Syrup, Cottage Cheese, or both
